Sautéed Sweet Potatoes & Greens with Garlic & Quinoa

A One-Pan Recipe to Ground You for the Season Ahead
As the days cool down, this warm, fiber-packed meal resets your gut and energy with whole foods and grounding flavors. Swapping in quinoa adds protein, texture, and a plant-based boost to your plate.
Ingredients (Serves 2–3):
- 1 medium sweet potato, diced
- 1 bunch of collard greens or kale, chopped or green beans (your preference)
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Sea salt + smoked paprika
- Cooked quinoa (about 1 cup)
Instructions:
- Sauté sweet potatoes in olive oil over medium heat for 8–10 mins, stirring occasionally.
- Add garlic and greens; cook another 3–5 mins until greens are wilted.
- Season with sea salt and smoked paprika.
- Serve over warm quinoa or mix and enjoy immediately.
