When the weather’s heavy and your appetite is light, this salad hits all the right notes: refreshing, sweet, crunchy, and clean.


Ingredients (Serves 2):

  • 1 cup cantaloupe or watermelon, cubed
  • ½ cucumber, thinly sliced
  • Juice of ½ lime
  • 1 tsp raw local honey
  • Handful of fresh mint, torn
  • Sea salt to finish

Instructions:

  1. Combine melon and cucumber in a chilled bowl.
  2. Whisk lime juice and honey in a small dish.
  3. Pour over fruit mixture.
  4. Add torn mint and a pinch of sea salt.
  5. Chill for 10–15 minutes before serving.
