When the weather’s heavy and your appetite is light, this salad hits all the right notes: refreshing, sweet, crunchy, and clean.
Ingredients (Serves 2):
- 1 cup cantaloupe or watermelon, cubed
- ½ cucumber, thinly sliced
- Juice of ½ lime
- 1 tsp raw local honey
- Handful of fresh mint, torn
- Sea salt to finish
Instructions:
- Combine melon and cucumber in a chilled bowl.
- Whisk lime juice and honey in a small dish.
- Pour over fruit mixture.
- Add torn mint and a pinch of sea salt.
- Chill for 10–15 minutes before serving.
