The Perfect Side (or Main) for Long Summer Days

This dish celebrates everything July has to offer: sweetness from just-picked corn, bite from fresh zucchini, and the brightness of hand-torn herbs. It’s simple, nourishing, and done in about 20 minutes.


Ingredients (Serves 2–4):

  • 2 ears of fresh corn (shucked)
  • 1 large zucchini (sliced into half-moons)
  • 2 tbsp olive oil
  • Sea salt and black pepper
  • Juice of 1 lemon
  • Fresh Arugula
  • Optional: crumbled goat cheese or vegan feta

Instructions:

  1. Brush corn and zucchini slices with olive oil and sprinkle with salt and pepper.
  2. Grill on medium (according to your grill settings) heat for 5–7 minutes, turning until lightly charred.
  3. Cut corn off the cob and combine with zucchini in a bowl.
  4. Add herbs, lemon juice, and a drizzle of olive oil. Toss gently.
  5. Serve warm or chilled. Add cheese if desired.
